This "Aceto Balsamico Tradizionale di Reggio Emilia" is produced in the traditional painstaking method of reduction through a years-long process of barrel aging. Each bottle is packaged in an attractive box, individually numbered, and includes a booklet explaining the process and history of balsamic vinegar in the true tradition. The booklet is produced by the Consorzio fra Produttori di Aceto Balsamico Tradizionale de Reggio Emilia. The Silver Label has a more intense aroma than the Red Label with a sweet, rich flavor. The Silver Label is not as complex as the top of the line Gold Label. Aging takes place over many years. This selection is a minimum of 12 years old by the consortium standard (some say it is 50!), and is one of the best balsamic vinegars available. The thick consistency is rich in flavors of the woods and grapes much like a fine wine.
