Lomo is a dry-cured pork loin that is very popular in Spain as part of a traditional tapas course. The whole loin is infused with spices including paprika and then cured for a minimum of three months. This dry cure produces a lean loin with flavor that is neither hot nor spicy. Served as a Tapas or as an ingredient in a meal, this product is excellent. Lomo is an exciting alternative to serrano ham or chorizo. Best served with Manchego cheese, it makes a great sandwich on crusty bread or just drizzle the pork with extra virgin olive oil and enjoy.
