Humboldt Fog is a surface ripened goat's milk cheese from California. Humboldt is always recognizable for its distinctively whimsical cake like appearance. A layer of edible vegetable ash is added to the cheese at the half way point and e soft. Its flavors are mild and creamy, with acidic and tangy undertones. A favorite and elegantly simple presentation includes a few slices of Humboldt Fog, pears, and honeycomb, or perhaps just a drizzle of honey. For general cooking, pair Humboldt with acidic or earthy flavors, like a spinach salad with tangy vinaigrette. If you are looking for a wine pairing, try a crisp white wine to offset the richness of the cheese.

Brie de Meaux, named after the town of Meaux, is a French cheese produced in the region of Brie, located 50 kilometers to the east of Paris.�This is a raw, soft unpasteurized cow's milk cheese covered with a bloomy rind, a result of inoculation with Penicillium Candidum molds.
