Probat 222 is a fast acidifying culture for the product of fresh cheese, fermented milk products, sour cream, butter and certain semi-hard cheeses. Probat 222 forms lactic acid and due to its fast citrate fermentation process the culture develops a medium aroma (diacetyl) and very fast gas (CO2). Will make up to 132 to 264 gallons of milk based upon usage and recipe. This is a food based product that should be refrigerated when received. We do not accept liability, returns or refunds for food based, perishable products.
