Its dry texture is easily crumbled and works well in salads, especially if the salad contains other Mediterranean ingre dients. Feta isn't thought of as one of the best melting cheeses, but it will soften a great deal and become almost runny when cooked into an omelet or incorporated into a hot pasta dish.
