The cheese is hard, straw-colored, contains some medium-size holes and has a tendency to crack on cutting. Comte; has a floral aroma with nutty fudge flavors developing in the more mature cheese. Mimolette - (8 oz.) - a cheese from Normandy with a deep orange color and a distinctive flavor of butterscotch and caramel. Blue d'Auvergne - (8 oz.) has a wonderful aroma, a rich taste; the saltiness increases with the incidence of veining. The overall flavor is piquant but not overly sharp. Saint Andre - (7 oz.) is a triple cream cheese made with cow's milk, it has a bloomy white rind, that is as soft as velvet and the flavor is rich, creamy, all soft.
