The Cinnamon sold in the United States is Cinnamomumburmannii. It is precious not only as a flavoring for food but is esteemedas a medicine, a perfume, or one of the aromatics burned as incense. Korinji Cinnamon has a slightly more intensive color and flavor than the Vera and is thus rated the better type. Korinji is deep reddish brown and has a sharp Cinnamon flavor. The volatile oil content, which is the principal quality factor, is determined through steam distillation methodology; cinnamic aldehyde is the principal contributor to the spices flavor and aroma. Cinnamon has a characteristic woody, musty, and earthyflavor and aroma. It is warming to taste. Volatile oil content is the maindifference in the various Cinnamons offered. The finer the grind, the morequickly the Cinnamon is perceived by the taste buds.
