Montenebro is made from pasteurized goat's milk cheese in the Spanish province of Avila by a single dairy. The rind of this log shaped cheese is dark dray in color and covered in mold. This mold happens to be the same kind used in makingck and creamy, very easily spread and super decadent on the tongue. The flavor is tangy, comparable to a blue, but very rich with peppery and nutty tones. If you are looking for a wine pairing, keep in mind that this is a strong cheese. Try a bold or spicy red like Oregon Pinot Noir. A sweet dessert wine would also be an enjoyable combination.
