Dried Matsutake mushrooms (also called "pine mushrooms") are occasionally even ground into a powder to use as a flavoring agent to other dishes. Matsutakes are said to have a spicy flavor that is sometimes compared to cinnamon, but no description will suffice... you have to experience it for yourself! Matsutakes are prized in Japan because of their aroma and flavor. With Matsutakes, less is sometimes more, as their powerful flavor can overwhelm a dish if too much is used. To Reconstitute Matsutake Mushrooms: Rinse well and soak in water for 20 minutes or more. Use promptly after re-constituting.
