- Apricot kernels have taste and contents than resembles the ones of the almonds. The flour made from them, is a product of the cold pressing to extract the oil. In the finely ground powder there is large amounts of protein, less carbohydrates, phosphorus, iron, magnesium and dietary fiber. The flour is rich in B15, B17, A and E vitamins, niacin and phytosterols. Besides nutrients, apricot kernels contain amygdalin that hides some health risks when consumed excessively.
