A prime example of French cheese-making prowess. Selles-Sur-Cher comes from the lovely Loire Valley of France, made out of goat's milk. The rind is coated with black wood ash and blue/gray mold, protecting the delicate white paste inside. The aroma is firstly very ashy, but once you cut it you'll find intense notes of mushrooms. The flavor is buttery and grassy, with a nice acidity and mild saltiness, and a lingering, complex finish. The texture is rich and creamy, thick on the tongue. Serve this as a table cheese with other cheeses. Pair with a Sancerre or any white wine from the Loire Valley.
